Ingredients:

  • Rice: 2 cups (long-grain white rice preferred)
  • Meat: 1 pound (beef, chicken, or your choice, cut into desired pieces)
  • Vegetables:
    • 1 large onion, chopped
    • 1 green bell pepper, chopped
    • 1 yellow bell pepper (optional), chopped
    • 1 carrot, chopped (optional)
    • 1 (14.5 oz) can diced tomatoes
    • 2-3 fresh tomatoes, chopped
  • Spices and Seasonings:
    • Maggi Star Jellof seasoning (to taste)
    • Kitchen Glory seasoning (to taste)
    • 1 teaspoon thyme
    • Crayfish (ground or pounded, to taste)
    • Salt (to taste)
    • Vegetable oil

Instructions:

  1. Marinate the Meat: Season the meat with your preferred amount of Maggi Star Jellof seasoning, Kitchen Glory seasoning, and a pinch of salt. Set aside to marinate for at least 30 minutes while you prepare the other ingredients.

  2. Prepare the Vegetables:

    • Wash and chop the onion, bell peppers, and carrot (if using).
    • In a mortar and pestle or food processor, grind the crayfish and pepper together (optional, for a more intense flavor).
  3. Cook the Rice: Rinse the rice thoroughly in cold water until the water runs clear. In a separate pot, cook the rice according to package instructions.

  4. Sauté the Onions and Canned Tomatoes: Heat vegetable oil in a large pot or Dutch oven over medium heat. Add the chopped onions and cook until softened and translucent, about 5 minutes. Stir in the canned diced tomatoes and cook for an additional 5 minutes, breaking the tomatoes down with a spoon. Season with a little salt and thyme. Set this tomato mixture aside.

  5. Fry the Fresh Tomatoes (Optional): In a separate pan, heat another drizzle of vegetable oil. Fry the chopped fresh tomatoes for 5 minutes, stirring occasionally, until they soften and release their juices. Add the chopped vegetables (bell peppers and carrot, if using) and cook for another 2-3 minutes until slightly softened. Combine this fresh tomato mixture with the tomato sauce you set aside earlier.

  6. Assemble the Jollof Rice: In the pot with the tomato sauce, add the cooked rice, meat (along with any accumulated juices from marinating), and remaining spices (Maggi Star Jellof seasoning, Kitchen Glory seasoning, and any additional thyme). Stir gently to combine everything.

  7. Simmer and Steam: Add a small amount of water (about ½ cup) to the pot. Bring to a simmer, then reduce heat to low, cover the pot tightly with a lid, and let the jollof rice simmer for 15-20 minutes, or until the rice is cooked through and the liquid has been absorbed.

  8. Serve: Once cooked, turn off the heat and let the jollof rice stand for 5 minutes before fluffing with a fork and serving. Enjoy your homemade Jollof Rice!
