Sisters, forget that watery stew you cook. This is original MAMA PUT BUKA STEW recipe that men love. I learnt it from my auntie in Mararaba.
Ingredients (For 4 people):
- 10 big fresh tomatoes
- 5 tatashe (big red bell pepper)
- 3 shombo (small red pepper)
- 4 big onions
- 3 cups groundnut oil
- 1kg assorted meat or chicken
- 2 spoons curry, 2 thyme, 4 maggi, salt
- 1 spoon crayfish (secret ingredient)
Steps:
1. Fry your meat first: Season meat with salt, maggi, onion, curry. Boil small, then fry in oil till brown. Keep the meat stock.
2. Blend roughly: Don't blend tomatoes smooth like soup. Blend roughly, with 2 onions. Don't add water.
3. Boil to remove water: Put blended tomatoes in pot, boil on high heat for 15 mins until water dry. This is why buka stew is thick and red.
4. Fry: In another pot, heat 3 cups oil, add sliced onion, fry 2 mins. Add your boiled tomato paste. Fry for 15 mins, stir always so it won't burn. Add your meat stock, crayfish, maggi, curry, thyme.
5. Final: Add your fried meat, cook on low heat 5 mins. Taste salt.
Secret to make it like buka: Use enough oil and fry well, add little crayfish, don't put too much water.
Serve with white rice, beans, or yam.
