Preparation for Banga stew(ofe akwu)

Recipes 

Palmfruit(akwu),yellow or red pepper, crayfish,dried fish, fermented  castor seed (ogiri okpeyi), seasoning cubes,onions,scent leave and pumpkin leaves,meat(any meat of your choice)

Procedures

In a big pot wash your palmfruit with salt to remove germs if there is any🤭wash and cook in a pot with enough water inside it and allow it to cook for some minutes.

In another pot wash your meat whether beef or goat meat or chicken any can serve you,wash and season it well with salt, seasoning cubes and onion to bring out the flavor,then simmer for few minutes and bring it down.

Bring down your cooked palmfruit pound with mortar and pestle then add water to it and separate the oil from the palm kernels using a sieve,then sieve again to remove more excess palmfruit remains and other particles on it,pour it inside the pot and start cooking

When it starts cooking for some minutes you will notice a foamy particles on top of it remove those using your big spoon when the foams start changing colors like a dark colored particle,at this junction you can add your dried fish and stock fish,then blend your pepper, castor seed(toast the castor seed in the fire a little to improve its natural fragrance 😊), crayfish and onions together and then add them into the already cooking soup,then add your perboiled beef,goat meat or chicken (don't really like adding chicken into ofeakwu so I prefer beef 🤭)then add your seasoning cubes to it and cover to cook more and enhance the ingredients over it

Then pick your vegetables and cut into smaller sizes then wash and add into your soup don't let it overcook,just add and turn and bring it down because your delicious ofeakwu is ready 😋 😋 🤤 serve with a hot white rice
