How to Make Soft and Fluffy Nigerian Pancakes in 15 Minutes

 

 

Ingredients (for 4 portion pancakes)

 

  • 1 cup all-purpose flour
  • 1 egg
  • ½ cup liquid milk (or 3 tbsp milk powder mixed with water)
  • 2 tbsp sugar
  • 1 tbsp melted butter or vegetable oil
  • ½ tsp baking powder
  • A pinch of salt
  • Oil for frying

 

Instructions

 

1️⃣ Mix the dry ingredients

In a bowl, combine flour, sugar, baking powder, and a pinch of salt.

 

2️⃣ Add the wet ingredients

Crack in the egg, add milk, and melted butter. Mix until smooth. If the batter is too thick, add a little water until it’s slightly runny.

 

3️⃣ Heat your pan

Place a non-stick frying pan on low to medium heat and brush with a drop of oil.

 

4️⃣ Pour and spread the batter

Scoop a small amount of batter into the pan, gently swirling it into a round shape.

 

5️⃣ Cook until golden

Let the pancake cook for about 2 minutes until you see bubbles on top. Flip and cook the other side for 1–2 minutes.

 

6️⃣ Repeat for all batter

Brush the pan lightly with oil before each new pancake to prevent sticking.
