This recipe was given to me by my mother and has been passed on from the 3 generations before me. i believe its a shame not share such great taste. Follow the steps to make the best jam tart
Ingredients:
4 cups all purpose flour (250g)
250g butter
2 table spoons of bakin podwer
1/4 cups of suger x4
2 large eggs
Jam
Method:
pre heat stove :180 degrees for an hour
In a bowl put in your butter. Butter that has been left at room temperature works well. I dont have an electric beater, so i soften the butter with a spoon. Once that's done I then add my 2 eggs and vannila essence. I then use a whisk to mix those ingredients together and then when the mixture looks mixed and a bit creamy-ish, i then add the suger andwhck gain until its properly mixed in. Hold a sieve over the bowl and sift in your flour and banking powder, the gentle fold in the we nd dry ingridients using your wooden spoon.
Be careful not to over mix, the idea is to just fold in the flour enough to use your hand to kned the dough.Once you done your dough must not stick to your hands but be moist and dry. Break it a bit od dough measurement of about 250g and put one side, then cling wrap the remaining dough for about 30-45min
wait for the dough to freezer to be firm , then take take your cupcake tray , greese it using your non stick spray. Take the half that was not freezed and put small amount in your non stick tray then use your thumbs to flaten the dough in the pan. Make it as thin as possible to make it easy to back.
Then take 1 teaspoon of jam and spread it in the the flattened base. Then take the dough you froze and great it over the jam until the pans are covers . Bake until it golden brown for 35-40minutes
