Classic oven-roasted vegetables

Classic oven-roasted vegetables. 

Ingredients:

Vegetables: 2 cups broccoli florets, 2 cups cremini mushrooms, 1 zucchini, 1 yellow squash, 1 red bell pepper, 1 red onion

Dressing: 2 tbsp olive oil, 2 tbsp balsamic vinegar, 4 cloves garlic (minced)

Seasoning: 1 ½ tsp dried thyme, salt and pepper to taste

Instructions 

Preheat oven to 425°F (220°C) and grease a baking sheet.

Toss chopped vegetables with olive oil, balsamic vinegar, garlic, thyme, salt, and pepper.

Spread in a single layer on the baking sheet and roast for 12–15 minutes, or until tender and slightly caramelized.

Serve warm.
