Crispy Hash Browns with Caramelized Onions

Ingredients:

  • 4 medium potatoes: ~600g
  • 2 medium onions: ~300g
  • 3 tablespoons olive oil: ~45g
  • 2 tablespoons butter: ~30g
  • Salt to taste: ~5g
  • Black pepper to taste: ~2g
  • Fresh herbs (optional, such as chives or parsley): ~10g
  • Instructions:
  • Peel and grate the potatoes. Rinse them under cold water to remove excess starch, then squeeze out as much water as possible using a clean kitchen towel.
  • Slice the onions thinly.
  • In a large skillet, heat 1 tablespoon of olive oil and 1 tablespoon of butter over medium heat.
  • Add the sliced onions and cook, stirring occasionally, until they are golden brown and caramelized, about 15-20 minutes. Remove from the skillet and set aside.
  • In the same skillet, add the remaining olive oil and butter.
  • Add the grated potatoes, spreading them out evenly in the pan. Press down with a spatula to form a flat layer.
  • Cook over medium heat until the bottom is golden and crispy, about 5-7 minutes. Flip the hash browns and cook the other side until crispy and cooked through, another 5-7 minutes

  • Add the caramelized onions back to the skillet, mixing them gently with the hash browns.
  • Season with salt and black pepper to taste.
  • Garnish with fresh herbs if using.
