Golden Cornbread: A Classic Comfort Recipe

Ingredients: for about 8 people

  • 1 cup cornmeal: ~150g
  • 1 cup all-purpose flour: ~120g
  • 1 tablespoon baking powder: ~15g
  • 1/4 cup granulated sugar: ~50g
  • 1/2 teaspoon salt: ~2g
  •  
  • 1 cup milk: ~240g
  • 1/4 cup vegetable oil or melted butter: ~60g
  • 2 large eggs: ~100g
  • INSTRUCTIONS:
  • Preheat your oven to 200°C (400°F). Grease an 8-inch (20 cm) square baking dish or cast-iron skillet.

  • In a large bowl, whisk together the cornmeal, flour, baking powder, sugar, and salt until well combined
  • In another bowl, whisk together the milk, oil (or melted butter), and eggs until smooth.
  • Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are okay.
  • Pour the batter into the prepared baking dish and spread it evenly. Bake for 20-25 minutes or until the top is golden brown and a toothpick inserted in the center comes out clean.

     

  • Allow the cornbread to cool for a few minutes before slicing. Enjoy warm, with butter, honey, or your favorite spread
