DELICIOUS EGUSI SOUP RECIPE
Get ready to savor the rich flavors of this Egusi soup recipe, which is both delectable and straightforward to prepare.
Ingredients:
- 12 pieces of grilled smoked turkey
- 3 smoked mackerel fillets
- 2 cups ground melon (egusi)
- Nigerian Pepper mix (2 red bell peppers, 2 scotch bonnet peppers, 1 large onion)
- 1 cup palm oil
- 1 tablespoon locust beans (Iru woro) (substitute with ogiri or dawadawa)
- 1 tablespoon ground crayfish (adjust to taste)
- ⅓ cups dried prawns (washed, adjust to taste)
- 2 bouillon cubes
- 2 cups chopped spinach (washed)
- 1 cup beef stock (optional)
Instructions:
1. Mix ground melon with water to form a paste; set aside.
2. Heat palm oil in a pan over medium heat, then add chopped onions and sauté until translucent.
3. Add pepper mix and locust beans, stirring well. Bring to a boil for 5 minutes.
4. Gradually add the egusi paste to the pepper mixture, reduce heat, cover, and cook for 10 minutes without stirring.
5. After 10 minutes, gently stir the soup, breaking up any lumps with the back of a ladle.
6. Add smoked turkey, ground crayfish, dried prawns, and beef stock (if using). Adjust seasoning with bouillon cubes. Cook for another 10 minutes, stirring occasionally.
7. Incorporate shredded smoked mackerel and chopped spinach into the soup. Cook for an additional 3 to 5 minutes.
8. Remove from heat and let it cool for 10 minutes before serving.
Notes:
You can substitute spinach with any other green leafy vegetable.
- Feel free to replace smoked turkey with beef or goat meat.
- Serve with pounded yam, amala, eba, tuwo, or your preferred swallow. Enjoy your Egusi soup!
