STEP 1
In the bottom of your pot, arrange your eggs in a single layer. Fill the space with cold water. The
water level should be a half-inch or so above the eggs. Put a lid on the pot.

Bring your eggs to a rolling boil over high heat.

For large eggs, turn off the heat and let the eggs stand in water for 10 to 12 minutes. For smaller
eggs, shorten the standing period; for extra-large eggs, lengthen it.
